Hi everyone thought I would start this blog to keep track of the bits & bobs I get up to each day. I am a stay at home mum with 3 children who are in their teens & twenties. I have had Chronic Lyme Disease for at least 14 years if not more. I am constantly trying to improve my condition. I am a great fan of moneysavingexpert.com and have discovered a few ways of upping my income without too much effort

Molly Cake - 20 December 2012

Have been caught up with Christmas preparations hence not posting as often.  As promised I've finally got round to posting the Molly Cake recipe.  This is not a low carb recipe but it is 'clean eating' suitable for those with dairy or gluten intolerances.

MOLLY CAKE

Serves 8

250g Stoned Dates, roughly chopped
300ml water
85g plain flour
85g whole wheat flour
3 tsps baking powder
1 tsp ground mixed spice
500g mixed dried fruit
50g ground almonds
80ml Orange Juice

1.  Pre-heat oven to 1700C?Gas Mark 3 and line 2 loaf tins with baking parchment (this will make two flattish cakes, or for a full sized cake just use one loaf tin)
2.  Put the dates and water in a pan and bring to the boil.  Remove from the heat and set aside.
3.  Sieve the plain flour, baking powder and mixed spice into a bowl.  Add the whole meal flour, mixed fruit and ground  almond.  Stir to combine. Stir in the wet date mixture and the orange juice.  Mix well.  Add more water if too dry.     
4.  Spoon into the tin(s).  Bake for 50 minutes or until a skewer comes out clean.  Turn out onto a wire rack and cool.

I substituted the flour with gluten free brown rice flour and to make it more festive I replaced the orange juice with brandy

Tree Decorating and Present Wrapping




Spent most of the day putting up the tree.  Discovered DS was not in the least bit interested in decorating it so I found myself with the rare pleasure of decorating it all by myself.  It was both a pleasure and a sadness, knowing those special family times have gone, probably forever.

Had a bit of a tummy upset today so tried to eat lightly.  I had a few slices of gluten free bread in the freezer which I thought I would use up (I'm desperate for space), not very low carb today I know but.......

Stomach a bit more settled today.  By teatime I was so hungry I decided to risk it with the chops. 
Went to Lidl this morning but there weren't that many bargains.  I managed to get reduced price clementines and Bisto Best gravy granules which were much cheaper than in Tesco.

Spent the afternoon wrapping presents and realised there were some I'd completely forgotten to buy, but that is all in hand now.

Feeling absolutely exhausted and still there are things to do.  Next week I hope to make my gluten/lactose free treats and get the ham cooked.  I will probably have enough stock to make a big pan of soup.   There will also be those last minute presents to wrap.  I also need to get the girls rooms ready for their return and do ordinary housework like ironing, just hope I can keep going.  I still need energy for cooking the dinner on Christmas Day.  Apparently both Call the Midwife and Downton Abbey are on TV on Christmas Night just hope I'm not too tired to watch them.

Oven Cleaning Urgh! - Thursday 13 December 2012

Spent most of the day cleaining the cooker, now its already for the Christmas dinner!   Did a little dusting and put the Nativity scene out.  OH has agreed to put the ceiling decorations up and I will do the tree tomorrow.  With all these preparations I've had neither the time nor the energy to do Callanetics, I'm hoping to do at least one session next week just to keep my stamina up.

Low Carb Christmas Cocoa - Wednesday 12 December 2012

B: Scrambled egg and smokey bacon
L: chicken drumsticks with stir fried cabbage.  Cashew Nuts
D:  Bolognese with cauliflower.  Mug of Cocoa

I always make my cocoa with lactofree cream to ensure I have enough fats but I vary the flavours depending on how I'm feeling. 

Rum:  add a few drops of rum essence or as a real treat use real rum but this will contain carbs
Peppermint: add a few drops of peppermint essence
Cinnamon:  add 1/2-1tsp of cinnamon powder - this is real Christmassy

I also have flavoured tea.   I use Redbush tea leaves and always make tea in the teapot.  To my tea caddy I occasionally add one or all of the following:

bayleaves broken up
cardammon seeds
powdered cinnamon
powdered ginger
cloves

I then use the tea mixture as I usually would to make a pot of tea.  The result is a lovely spiced Indian tea.  You can still add milk if you want to, I do!  Of course you could just add a few drops of rum essence to your mug of tea for an alternative flavour!

In the summer I have added mint leaves or even lavender to my tea mixture for a more refreshing taste.

Quite a busy day and not much time to cook.   Had a work assignment this morning which I spent the afternoon writing up, and then I had do the weekly shop this evening.  So tired by the end of the day

Tuesday's Menu

B: Fried egg & bacon ( the egg didn't turn out very nice so I ended up having cashew nuts to fill me up)
L: Out to friends house not sure what we're having.
D: Haddock in cream cheese sauce (lactofree of course), celeriac chips & roasted green beans.

Off to deliver some home made jam to a friend today and we will be having lunch there.   Not too sure what we're getting but I will just accept whatever is given me as it would be rude not to.  I will try to eat low carb if it is at all possible.

My First Stone! - Sunday 9 December 2012

Pleased to report I have reached my first milestone today - I have lost 1st 1lb so far.  Still got a long way to go, but so pleased.

Spicy Green Beans - Friday 7 December 2012

Spicy Green Beans

(Masaladar Sem)

 Serves 3
 12 oz green beans (I used frozen ones)
1" cube  Ginger, peeled  and chopped
5 garlic cloves
5fl oz water
3 tbsps vegetable oil
1 tsp cumin
1/2 tsp Red chilli, crushed
4oz tomatoes, peeled and chopped
1/2 tsp salt
2 tbsps lemon juice
1/2 tsp ground black pepper

Trim the green beans and cut them, crosswise, at 1/4" intervals.  Put the ginger and garlic into an electric blender or food processor.  Add 2fl oz of the measured water and blend until fairly smooth.

Heat the oil in a wide, heavy saucepan over a medium flame.  When hot, put in the cumin seeds.  Five seconds later, put in the crushed chilli.  As soon as it darkens, pour in the ginger-garlic paste.  Stir and cook for about a minute.  Put in the coriander.  Stir a few times.

Now put in the chopped tomatoes.  Stir and cook for about 2 mins, mashing up the tomato pieces with the back of a slotted spoon as you do so.  Put in the beans, salt and remaining water.  Bring to the boil.  Simmer, cover  and turn the heat to low.  Cook for 8-10 mins or until the beans are tender.   Add the lemon juice, roasted cumin  and a generous amount of freshly ground pepper.  Turn heat up and boil away all of the liquid, stirring the beans gently as you do so.


I did not have all of the above ingredients in the house so I improvised:
Instead of fresh ginger I used ginger powder and mixed it with the crushed garlic and water to make a paste.
I did not have cumin  or coriander seeds so I used the powder forms instead.
Instead of fresh tomatoes I just used tomato puree, but I'm sure Tomato passata or tinned tomatoes would be ok.

More snow fell today a day earlier than forecast. Got to the woodpile just as first flurries were falling, coal man has also been so hopefully that will keep us going for a while.  Not done much today, just listened to some teachings on the Gospel of Luke ready for tonight's bible study (weather permitting).

Slept like a log last night and as a result have had a very productive day.  Did the weekly shopping, ordered extra coal, and got quite a few surveys done.  Emptied my sealed pot of loose change and bagged that ready to take to the bank.  I did forget to bring in more wood from the woodpile but will do that tomorrow,  must stock up before the forecasted snow on Thursday.  Discovered a probiotic I've been taking contains lactose and that may be the reason for the weight stall.  Have now thrown the said probiotic in the bin and hopefully the weight loss will begin again.

Hoping to get 40 mins of callanetics done later today but I've already changed DS bed today so will see how much energy I have left.  Hoping to make broth with the lamb bone either today or tomorrow, this will provide my lunches for the rest of the week

Its Freezing! - Saturday 1 December 2012

Welcome to a new month, it is absolutely freezing today, I did not want to venture outside at all, but had to make the weekly trip to Lidl.   Also had to get more wood in just in case it decides to snow.  I pity DD2  who is climbing Snowdonia today brrr.

So dissapointed this morning to discover I haven't lost any weight this week.  I felt I'd worked really hard doing callanetics and sticking to my diet. I think perhaps I'm not drinking enough. I dislike drinking water in winter as it is so cold, I have tried compensating by having more hot drinks. Will just have to continue as I know it will come off at some point.  I would, ideally, like to lose another 4lb before Christmas.

Slept much better last night and what a difference it makes.  Feeling much more with it and motivated.   Hoping to make a tray of mini Christmas cakes today, that will leave just two corned beef & potato pies to do.  Once the pies are done I can start making low carb stuff for myself.

Low Carb Lemon Curd - Wednesday 28 November 2012

LOW CARB LEMON CURD

 

25g/1oz unsalted butter
1 organic lemon
1 free range egg

Melt butter in a basin over a pan of boiling water.  When soft, remove from heat and grate the rind of a well-scrubbed lemon into the melted butter, then squeeze the lemon and add the juice.  Beat with a wooden spoon, then add the egg and continue to beat.  Return basin to the heat over the pan and stir constantly until the mixture thickens.  I expect this would go great with flax pancakes.





Daily Update

Still struggling with energy levels, beginning to panic over all there is still to do before Christmas.  Discussed with OH  and he has agreed to help with putting decorations up etc.

  Slept a little better last night so that has given me an energy spurt today.  Hope to get callanetics done and sort jams out ready for friend to collect.   Got the heating on today as well as the woodburner and I think that is helping me to feel better.  I think when I'm cold all my energy goes into keeping me warm.

After sleeping in till 10 am, I got Lidl shopping done, including 3 free advent calendar's which will go in the food bank bag.   Did some Christmas shopping online and a few surveys.

Saturday night in our family has traditionally been 'chip night' when we go to the local chippy, so as not to miss out I'm having celeriac chips which I like much better anyway.

After putting on 1lb in weight last week I'm pleased to announce I have lost it again this week :)

Low Carb & Lactofree Chicken Supreme - Wednesday 21 November 2012

Chicken Supreme





Any left over chicken, diced.
About 6 mushrooms chopped
2 tbsps chicken stock (optional)
1 tub lactofree soft cheese
1 carton lactofree cream


In a largish saucepan melt the cream cheese.  Gradually add the  diced chicken.  If it is too thick to work then add a little cream, a little at a time.  Continue adding small amounts of chicken, cream & mushrooms until all used up.  Finally add the chicken stock.   Simmer for about 10-15 mins stirring occasionally.   The rest of my family had this with pasta, it  can also be served with rice.  As you can see I had broccoli and celeriac chips.




Had a much better sleep last night and after just one day being back on low carb my head is much better and I can think straight again.  Energy levels are still low but now I'm back on the straight and narrow these should improve too.

Resisting Temptation - Tuesday 20 November 2012

Head still bad today finding it very difficult to think clearly.   Just wanted to get the shopping done and get home again.  No idea what I've bought!   I know I bought a small tub of ice cream because I had a coupon making it very cheap, and I thought it would be a treat for my son.   Half way round the shop I was feeling quite hungry and was very tempted to pig out.  I even got to the extent of looking down the bakery isle.  I then told myself I did not want to end up at 16st and I would feel even worse if I ate this rubbish.   When I got home decided to have a really quick and easy to prepare lunch, and to give in and have chocolate to take away any temptation to eat other high carb sweet stuff.   Really struggling energy wise.  I've not even lit the fire yet but caved in and put the central heating on.   Instead of doing a big roast dinner I have opted for the easier option of Chicken supreme.

Well had KFC and felt awful afterwards.  Will have to try and get take away jobs in future then I can give the food to my son.  Still feeling dreadful and have come to the conclusion it is partly due to the rubbish I've been eating.

Low Carb Bubble & Squeak - Saturday 17 November 2012

B: Low Carb Blueberry 'cheesecake'
L:  Cauliflower & cream cheese soup.  Peanuts.
D: Low carb bubble & squeak, fried spam & fried egg.  2 squares 74% chocolate.  Mug of Cocoa


Low Carb Bubble & Squeak

1 Cup of cooked cabbage
1 cup of diced onions (I used frozen ones)
1 Cup of mashed celeriac
Salt & pepper

Fry the onions in a little oil or butter.  Add the cabbage, followed by the mashed celeriac.  Cook until thoroughly heated. 
  


Had a much easier day today.  After doing the Lidl shop I decided to do something a little less energetic.  I am glad to say I have now got my Christmas cards all written!   I have just finished listing things on Ebay as it is Free Listing this weekend.  Slept much better the last two nights, just need a few more good nights sleep and hopefully my energy levels will start to pick up again.

Exhausted Today - Thursday 15 November 2012

Not been  sleeping well the last few nights and it finally  caught up with me today.  Feel absolutely exhausted but have to keep going.  OH is out all day so I need to be here for DS and I have promised to serve the teas & coffees at the quiz tonight so can't get out of that.

Back again! - Wednesday 14 November 2012



Had terrible day yesterday. Ate pastries, pies, & cakes after the funeral. Then there was so much left we all brought a little home and I had the same again for tea because I was too tired to make anything else. I thought it would be a real treat but after eating one or two items off my plate I realised I wasn't enjoying it at all and much prefered my low carb food. As always when I eat things containing lactose I ended up with a sore mouth but at least I haven't had the stomach cramps too. So glad to get back to normality today.

Window shopping - Saturday 3 November 2012

After Lidl shop decided to do a spot of window shopping.  Had a look in Sainsbury's as there is a 25% off clothing sale, saw some slippers I like but non in my size.   Then went to Homebase to look at wallpaper.  I've been wanting to decorate the dining room for sometime now and have decided to start collecting vouchers for homebase so I can get some wallpaper.  It will be sometime before I have enough vouchers.

Have felt really cold today and have not wanted to move far from the woodburner.   Have to really bundle myself up when using the computer as this room is freezing, roll on when I can get my laptop.

Chip Medley - Wednesday 31 October 2012

Tonight the rest of the family are having chips so I thought I would try out the mouli and marrow to see what they're like.  Tonight I have a mixture of mouli, marrow & celeriac chips,  They are still cooking in the oven so will let you know how they turn out.

Much better shop today, no problems getting through checkout with coupons.  Used the £30 giftcard compensation to get a few prezzies in for Christmas.


Yesterday whilst visiting Mam I took the opportunity to go to the Asian food store and got a tub of coconut oil, a mouli and a marrow so well stocked up for making chips now.

Scanned shopping, put it away, then just had time for lunch before it was time to light the woodburner and make Dinner.   Even managed to do a few surveys and catch up on emails.  Well pleased with what I've achieved.
Hoping to get some Callanetics done tomorrow, haven't done any for a week so it will be hard going I expect.

Happy Birthday Mum - Monday 29 October 2012

Spent a lovely day with my mum, my two sisters and their families.   Its a long time since we've all been together and it was lovely.  Even mum's great grandchild was there.  Didn't wander too far from the low carb diet.  Even the cake was decorated with cream cheese topping!

One of my sisters who is allowed on DD2's facebook told me she is starting to feel a little homesick.   Bit worried as not heard from her this weekend despite sending a couple of texts.


Popped into the Asian food store whilst there and got a mouli,  some sort of marrow and a tub of coconut oil.  That should keep me stocked up for a while.  Will try making 'chips' with the mouli.

Fell off the wagon a bit tonight.  After my first ever MS assignment I am completely exhausted.  Was so nervous, I didn't sleep well last night and its now catching up with me.  Needless to say don't think I did a good job.  Clients sussed me out, I believe.  Nevertheless I thoroughly enjoyed it and can't wait for the next one.  At least now I know what to expect and can improve my technique.  Its great to be working again!

Spent rest of evening filling in reports and submitting Shop and Scan receipts and barcodes.

Oooh, almost forgot I lost 3lbs Today, only 1lb more to go for my 1st stone!

No Interruptions - Friday 26 October 2012

At last a day without interruptions.  Managed to have a time with the Lord this morning, lovely and peaceful.   Isn't it strange that when we give everything to the Lord the day runs a little bit smoother.    I managed to replant the plants this morning all before 11.30 which is unheard of.   Normally I only get dressed around 11 am.   I am really pleased, as not only does the area in front of the fence look tidier, I even managed to transplant some strawberries out of the planters, even thought the space is much smaller than before!  Much colder today, felt really icy so will have to dig out the fleece and cover the strawberries to be on the safe side.

I spent the afternoon on the computer doing surveys, sorting Ebay stuff out and felt very organised, even had time to catch up on farmville!   Whilst tea was cooking I cut, peeled and froze 5lbs of apples!

Got my first mystery shop tomorrow, so feeling very nervous.

Frustrating Day - Thursday 25 October 2012

Day didn't start off too well.   Man arrived to replace fence in garden.  Opened the door to discover the plants I thought OH had dug out the night before were still there, was NOT impressed.   So before breakfast had to go out and start cutting down stems ready for digging out.  OH then appeared and dug them out.

After breakfast decided to discover why the printer was not printing correctly.  Took me most of the morning to find instructions for cleaning the nozzle and print heads as was not in the manual or on the Epson website.  Was going to get Ebay parcels prepared today but on double checking discovered the items had not been paid for yet  so was unable to do that.  

This afternoon I'm hoping to do some more swotting to qualify as a mystery shopper. Was hoping today would be less frustrating/stressful than the last two, hopefully this afternoon will be.

Indian Style Celeriac 'Chips' - Wednesday 24 October 2012

Its one of those days where I don't seem to be getting much done. Still haven't had a cup of tea this morning. Got work man in repairing/replacing a bathroom tap, Father in law has been to print something off as his printer is broken, window cleaner has been and cleaned the windows IN THE RAIN and I still haven't done any of the jobs I wanted to get done today. The main one is to dig out plants ready for new fence being put in tomorrow. Must get that done this afternoon.


Mr T's got back to me this evening and apologised for my experience. They are sending a £20 giftcard as an apology. They said that over the next few weeks they will be revisiting stores around the country in regards to coupon policy(that they do accept printed coupons) as they have had loads of similar calls this week. Said if it should happen to me again I have to request to see the Duty Manager.

Indian Style Celeriac 'chips'

Cut the celeriac into chip shapes.    In a bowl or if you prefer a plastic bag place 1 tablespoon turmeric,  a pinch of chilli powder and a pinch of salt.   Tip the chips into the spice mixture and coat them.  In a frying/chip pan melt lard or fat of your choice.  Add the spiced chips and cook as you would normal chips.

Trouted at T's - Tuesday 23 October 2012

Just had an horrendous shopping trip at T's. Over the last few weeks I have been using slightly more vouchers than usualas I'm stocking up for Christmas. Last week the checkout operator mentioned that she had been warned to make sure I had bought everything. This week I made doubly sure that every coupon and item matched up. As soon as I arrived at the checkout ( I always use the same one) the girl said she had been instructed to call the Supervisor over when I arrived. Two Supervisors appeared and started to check items with coupons before they even went through the till. They accepted some coupons and not others . Amongst the ones rejected were some for Heinz soup (which is on special offer) their reason 'it was a photocopy' yet it had been printed off the same computer and printer as other coupons which had been accepted. I pointed this out but they still refused. I told them I no longer wanted the soup and would complain to head office. When I got home I realised the soup had still been put through. I'm too tired and upset to take it back. I have just come off the phone, rather embarrassingly I burst into tears whilst explaining what happened. I explained I have ME and any stress exacerbates it. They gave me a ref number and said they will get back to me. It was really horrible.

Monday

T: 3 Sausages, mashed swede, cabbage, broccoli & carrots.  Mug of cocoa

After eating the 4 squares of chocolate on Saturday I really felt on a 'high'  couldn't relax, or concentrate on much.  Ended up getting up at 5 am on Sunday morning.   Think I need to  look at whether I should be eating chocolate at all.  Not sure what caused the adrenaline rush, whether it was the cocoa, the sugar or a reaction to the milk.  I do know I don't get the same reaction when eating sugar/dairy free carob, but I don't enjoy carob as much as chocolate!  I seem to be ok with mugs of cocoa made with lactofree cream.  I think it is when I eat so much chocolate in one go that it affects me so much .  Must be more disciplined and ration myself.

Yesterday morning I signed up to be a mystery shopper so have that to look forward to sometime in the future.

Today I need to do my callenetics and then clean the bathroom.

Really looking forward to tea tonight.  It is the first time I've made Keema (mince curry) in years.  My daughters don't like it so it never got made but my son loves curry so we can have this again.  Whats more I've made enough for two nights so I don't have to cook tomorrow.

Don't know whats happened but I'm really organised today.  Perhaps its because I had a prayer time yesterday and committed everything to the Lord.   I've already got the tea cooked so now I can spend some time doing surveys,  son will be in late as he is going the gym straight after school so no rush.  Got House Group tonight.


Keema 

(Mince Curry)

1lb Minced Beef                                                                         2 bay leaves
2 medium onions chopped                                                          4 cloves
4 cloves of garlic, pressed.                                                          2 small pieces of cinnamon bark
1 tsp Turmeric                                                                             4 green cardamon seeds
Chilli powder (I used just a pinch but you can add more)              1 tbsp tomato puree
1 tsp  ground cummin                                                                  Potatoes (optional)
1 tsp ground coriander
1tsp each of salt and black pepper
1 tsp ground ginger

Brown mince off in a large saucepan.  Add garlic, all the spices and onions.  Stir in the tablespoon of tomatoe puree.   Add potatoes if using them.   When the curry starts sticking to the bottom of the pan gradually add water until you have sufficient sauce for your curry. Simmer all this until potatoes are soft or about 30 minutes.  Serve.

Today has just flown by.  This morning was taken up with doing Callenetics and having a shower, and printing off coupons for tomorrow's shop..  Then it was lunch which was interrupted by a few phone calls and now it is already tea time and DS wants his turn on the computer.  Hoping to get ironing done tonight after tea.

Was hoping to do a few surveys but for some reason could not access my email, of course its sorted now I no longer have time to do any.

Tried the mashed celeriac but unfortunately I let the pan boil dry and so it had a slightly burnt taste to it, also did the same with the cabbage.   Even with the burnt taste I thought the celeriac a good substitute for mashed potato and will be having it again.

'Chips' - Saturday 13 October 2012

Tried Celeriac 'chips' tonight and ........ they're gorgeous! Definitely a favourite up there with roasted green beans. So nice to have something different on the menu. I can see them becoming a real comfort food. I just melted some lard in a roasting dish, placed the 'chips' in it, then sprinkled with salt and cajun spices but to be honest I think I would enjoy them even without the spices. Hmmm - think I might try some celeriac mash with my roast tomorrow.

Disappointed to see I'd gained 1lb this week but was comforted by the fact I'd lost another inch.

Finally Skyped DD2 and caught up with what she is doing.  Had not heard from her for 2 weeks.  It was lovely being able to see and hear her.

Battled through the weeds at the allotment today and got the last of the potatoes and parsnips.  Also got last few bits and pieces.   OH and DS will go down at the weekend and bring back my storage container and that will be the end of the allotment. 

Last night had chat with neighbour about the fence and think we have got things sorted out.  Still have to remove my plants, hopefully only temporarily whilst the new fence is put in place.  Such a shame as some have only been in a few weeks and were just settling down.

Did a few surveys today, even had time to visit Maximiles, and was able to claim £10 from Swagbucks.

Lunch was really tasty today, must make that again.

Saved over £11 shopping in Tesco today.  Aldi have got the turkey crowns in so need to stock up on those next week.  Don't feel so tired or stressed today. 

It may have been noted that I tend to eat nuts each day, one of the reasons for this is I want to make sure there is enough calcium in my diet.

Had gas man round to repair boiler as we were without hot water yesterday.

Not too good today.  Feeling down, weepy and stressed.   Next door neighbour wants to repair a fence that borders onto the side of our garden.  She wants to move it 4" in line with the rest of the fence.  This means I have to remove plants which I have tried for years  to get established and have only just succeeded.  Really fed up with said neighbour and wish we could just move and get away but have to wait until DS finishes school in 3 years time.

Really struggling today.  Felt exhausted and at one point weepy, which usually means I've done too much.  Felt overwhelmed by the list of things I would like to get done.

 Did the Lidl shopping and got the ironing out of the way.

Had the munchies today, really craving sweet things. partly I think for comfort.  Took a lot of effort to cook meals today as I really didn't feel like it.  Managed to resist, so far.

Disappointed haven't lost weight this week, or inches, despite the extra effort it took me to exercise.

Spent quite a bit of time this morning promoting my Facebook selling page Newton Hall Buy,Sell, Swap and putting a new item for sale on it.   Also got something ready for listing on Ebay.  Was going to schedule it, and then adjust the time when a free listing weekend occured but I couldn't find the schedule button!  Waded through the few surveys in my email box but they didn't amount to much.

Had a lovely day baking.  I made:

1 large rhubarb pie
1 small rhubarb pie
1 rhubarb & ginger cake
1 rhubarb crumble
1 doz mince pies
4 cheese straws
1 doz chocolate crispy cakes.

The pies and cake are for Christmas hampers or table top sale, the crumble is for Father in law to enjoy, the mince pies and cheese straws are in the freezer for over Christmas time, and the crispy cakes are for DS packed lunches.  Its a long time since I've enjoyed baking so much, just as well as there's plenty to do.  Next time I bake it will be things with apple as Father in law brought round a large bucket full at the beginning of the week.

Was so tired last night I went to bed with a headache and still had it when I woke up.  So, apart from doing the shopping and a very easy meal tonight I will be taking things easier.

Saved £24.30 using coupons this week.  Got a few free cans of drink in ready for Christmas.

The lamb 'broth' I usually make with pulses but this time I omitted them and just thickened the soup with plenty of onions.

Looking forward to watching the Great British Bake Off tonight.

Busy Day! - Monday 1st October 2012

Didn't sleep well thinking about all the stuff I had to do.   Started thinking of things to make which I can sell at the church table top sale or on ebay, if only I had the energy to make them!

Printed off coupons for tomorrow's shop whilst eating breakfast.

Did two hours gardening today.  Started off at the allotment where I dug up more potatoes and dug up some raspberry canes.  I then re-planted the canes in our back garden, no easy feat!  I was thoroughly exhausted by the time I'd finished.  Just two more stints at the lotty then I can give it up.

Had a quick shower and even quicker lunch, only had time for snacky stuff.   It felt like I'd just finished lunch and it was time to make tea. I also made some soup for lunches this week, whilst I was preparing the tea.  We went to a Sixth form open evening with DS so I had to start making tea at about 3pm so that we could eat it in plenty of time for 5pm.   Meeting started at 6pm and finished just after 8pm (included walking up three flights of stairs).    On the way home we had to call in at Father in laws to help him with something before finally getting home at about 8.45pm.  Made myself a cup of tea and have just finished sorting out Ebay parcels for the post tomorrow.    Needless to say I am absolutely shattered.  Think I may sleep in  for an extra half hour tomorrow.

I realise parsnips are not low carb but this is going to be my weekly treat during the winter months.

I got quite a large leg of lamb so it will do two meals and I can make soup with the bone.

Been busy making the roast dinner for lunch so no time to listen to a sermon, will have to make time later today. Think I might try listening to the series on Luke with  Twin City Fellowship online sermons.  It will fit in well with our study on a Wednesday night.

The pork loin steaks are still on offer at Lidl so got another pack of those and also stocked up on parsnips as DS loves them.  I may treat myself to them once a week with Sunday lunch.

Yesterday I was feeling pleased that I had made more space in the freezer by using the rhubarb to make jam, this morning father in law brings round a huge bucket of apples so these will now replace the rhubarb.

Had computer trouble this morning when it kept crashing.  Did disc clean up and seems to be alright now.

Feeling tired today and could do with resting a bit more.   However I prepared the rhubarb last night ready to make rhubarb & raspberry jam so need to complete that.  Not sure where I'm going to store it when its made.  It is to make up an order of 40 jars for a friend.

Something happened to the water this morning whilst having my shower as it suddenely turned to freezing, had to quickly nip along to the other bathroom and use that shower.    Then at lunchtime I tried to open the tin of spam and the ring pull broke.  I finally succeeded in opening the tin after trying three different tin openers.

Very quiet here today, but I'm enjoying it.  So far managed to make vegetable soup and put mince casserole to slow cook in oven.

Got house group tonight, we're studying the Gospel of Luke with study notes from John McArthur.

Then There Were Three - 25 September 2012

Drove back all day yesterday in this dreadful rain! 

DD2 now deposited at Uni and having a great time by the sounds of it.  I was determined not to cry but what should happen, DD2 shed a few tears as we said our goodbyes,  I managed to hold off until we got to the travelodge.  Yesterday we called in and had lunch with DD1 before continuing the journey home. 

House is very empty now.  It will take some getting used to.

Did the weekly shop today and can't believe how much less we need.  Saved £13 using coupons.

Last Day - 22 September 2012

 I don't even like celery but the cheese and peanut butter disguise the taste a little and my taste buds are changing.
D: Chicken Curry & fried cauliflower & okra.  Blueberries & cream.

Last full day with DD2 today.  Lots of last minute things to get done.

Lidl shop resulted in stocking up on pork loin steaks and chicken inner fillets.  We won't need so much now there is only three of us.   I was disappointed to note that Lidl have replaced  their full fat Greek yoghurt with a low fat version.

Need to list stuff on ebay today as it is a free listing weekend.   Then I need to submit till receipts and barcodes to Shop & Scan.

I'm hoping to fit in callanetics somewhere today.  I also need to prepare an overnigth bag for myself and OH.  We are stopping off at a travelodge on Sunday evening to break the journey.   On Monday we will stop off at Sheffield to see DD1.  This means I will not post tomorrow or Monday but I'll be back on Tuesday.

Jeans! - Friday 21 September 2012

Last night I spilt something on the trousers I was wearing. I was going out to a quiz night so needed to change but didn't have much clean/ironed. Decided to try my jeans, last time they wouldn't fasten. Tonight they went on quite easily and are fairly comfortable, and to top it all we Won the quiz!

L: 2 boiled eggs (struggling for ideas, need to make soup but no time)
Changed my mind, decided I need some greens, so now I'm having; 1 tbsp peanut butter, 1tbsp lactofree cream cheese with lettuce and celery.  Will have a glass of water too.

Struggling to drink sufficient water these days.  Now the weather has turned colder I don't really want to have cold water to drink.  Will have to be disciplined as I think this may be one of the reasons for the leg cramps.

Need to get ironing done so that DD2 can get packed.

Set myself a task of listing 2-3 items per day on ebay.  I've quite a few cross stitch charts to list and have been putting it off for months.  I listed 4 yesterday and 4 today, doesn't seem so bad when broken up into smaller lots.

Tonight is the monthly quiz night at father in laws church to which we are expected to go and which we enjoy.

Busy sorting out DD2 laundry so that she can pack.

Took Ebay items to post office and did other bits of shopping whilst out.  Got caught up with surveys.

No time for Callanetics today will have to try on to make time on Saturday.

Going to bake some muffins today for DD2 to take to Uni with her.  If there's time will do a cake for Father-in-law too.

I am making Lasagne for the rest of the family tonight so I will just have the bolognese sauce.

Still suffering from painful cramps in my legs during the night.  I've bought some tonic water to see if that helps.

Weekly Shop -Tuesday 18 September 2012

Didn't fancy making much for lunch after I got back from shopping today and I wasn't very hungry anyway.

Saved about £10 using money off coupons today.

Away overnight at the weekend so have stocked up on pork curls, salted cashews, chocolate and lactofree portions.  Still don't know what to do about breakfast on Monday morning as we are staying in a Travelodge.  I'm thinking of making up some flax muesli, putting it in a sandwich bag, then if I take a bowl and spoon I can have that.

Letting Go - 17 September 2012


 Feeling really emotional and weepy last few days and have snapped at everyone at some point.  Getting really upset at the thought of DD2 going to Uni. This is the second time I've done this and it doesn't get any easier. In fact it is harder this time. With DD1 I was in ignorance when we deposited her at Uni. I thought 'oh it will be ok, at least I'll see her during the hols which are quite long' On the journey home OH quickly dispelled that idea by telling me DD1 had effectively left home, she would have to work during hols and so wouldn't be home as often as I was expecting. This time I know what to expect, DD2 is further away and it will be even harder for her to get home. DD2 is the one I worry about the most. She has mild asthma and food allergies, and is the quiet one, so I guess I've always been more protective of her. Her term does not finish until 24th December so it may be she won't get home for Christmas

Dug up first of the potatoes today and managed to transplant the rhubarb and asparagus in our back garden.

Today is quite busy.  This morning I went Lidl shopping and stocked up on the half price sausages and reduced price vegetables.   This afternoon we are going shopping for Uni stuff and this evening I am going to a Wedding reception.  Not really sure what I will be having meal wise for the rest of the day it depends on what I have time for.

Tired Day 14 September 2012

L:  Cauliflower and cream cheese soup.  Pistachios
D: Chilli Meatloaf, cabbage, sprouts & mashed swede.  Blueberries & cream

Very tired today.  Done very little apart from making the evening meal.  Got busy weekend ahead as need to get stuff for DD2 going to Uni.  Then next week we will need to pack it all up ready to take her to Wales next weekend.

As you can see above I made Cauliflower & cream cheese soup for lunch.  It was very nice but I think I need to get a hand blender as the texture was not quite right.  To make it I just boiled some frozen cauliflower until softened ( I also added a little chopped celery which needed using up).  In another pan I soft heated some lactofree soft cheese until it was even softer and slightly runny.   I then mashed the cauliflower and added a little at a time to the cream cheese, until I had a lovely creamy soup!
